What is honey?

Honey is a sweet substance produced by bees from flower nectar. Amber, golden, or translucent, honey can take on different colors and there are many varieties. 10 to 25 kilos are harvested per hive per year. Honey is called monofloral or multifloral depending on whether it comes from a single or multiple floral species.

Honey is on average composed of:

  • 20% floral water
  • 75 to 79% sugars, 70% of which are simple sugars, the rest being compound sugars
  • 1 to 5% of proteins, mineral salts, trace elements, organic acids (including formic acid), essential aromatic substances, antibiotic substance (inhibin), pollen grains and pigments.

Honey is a living product which therefore has more than 180 nutrients.

Dr. Descotte , (former head of visceral surgery and transplantation at the Limoges University Hospital, and founder of the French-speaking Apitherapy Association) demonstrated the antibacterial and healing effectiveness of honey through an experiment conducted on more than 3,000 patients. The results were positive for more than 97% of them.
